Blackstone Grill Chicken Fajitas
There’s something about fajitas that just makes them irresistible. Maybe it’s the mix of flavors—the savory chicken and the sweet and smoky onions.
- 4-6 Chicken Breast
- 2-4 Bell peppers (any color)
- 2 Onion
- 2 tbsp Seasoning from Fresh Jax Mesquite Lime
- 4 tbsp Olive Oil
Slice the bell peppers and onion thinly.
Turn on the griddle to medium-high heat (350°F/180°C)
Place 2 spoonfuls of oil on the griddle in two locations. Chicken and onion and pepper oil should be used. Cover the onions and peppers with a lid to keep them from burning as they cook. Stir frequently to prevent burning
Season the chicken with salt and pepper. To make sure they're seasoned correctly, sear them on all sides on the griddle for 5 minutes before grilling or broiling. After 5 more minutes of cooking on low heat, check the temperature of the chicken. Continue to cook until the chicken is 160 degrees Fahrenheit. Then slice it very thinly. Reduce the heat while the vegetables continue to cook.
Combine all of the ingredients in a large mixing bowl, add them to a medium saucepan and simmer until your veggies are soft. Serve warm with some bread if you wish.
